Set some live traps or if u know of holes some local lads who hunt might smoke them out with terriers and lurchers

If it were me, id use the eggs.

Reguards tackling the rats! Get down plenty of traps, and keep them set all year round. Lots of traps for sale on here.

Another very important thing you must do, is clear away any rubble, long grass, or anywhere rats can use as cover. This is not aimed at you personally of course, so may not apply. Yes?, it is impossible to remove all cover, but removing as much as possible, and keeping grass low will certainly help.

Another important factor is food supply. Good quality feeders that have little spillage will help. Also taking feeders in at night is a must. Storing feed in rat proof containers will also help.

Try treadle feeders or trigger happy chicken feeders
